Oats are an invaluable cereal for the body's well-being; they are a source of fibres, vitamins, proteins and many other nutrients. Compared to other cereals, even when processed it retains the germ and bran that contain most of the nutrients, so it is a much more complete and healthy food. Nutritionally, oat grains consist mostly of starches and carbohydrates (60-70%), but they are an excellent source of vegetable protein (about 15%) and good fats. Its peculiarity is that it releases energy for many consecutive hours due to its molecular structure, which is digested very slowly and gradually by the intestine. Another aspect to note is that it does not cause major spikes in insulin levels in the blood. Compared to other flours, oatmeal contains as many as 5 essential amino acids, which are indispensable for the body's proper functioning. The body cannot synthesise them on its own and therefore they must be taken in with food. Oatmeal contains the EAAs Phenylalanine, Isoleucine, Leucine, Methionine and is particularly rich in the amino acid Lysine, which tends to be deficient in cereals. It is therefore considered a great ally in slimming diets. Oats provide approximately 370 kcal per 100 grams, so it is not a low-calorie cereal, but its characteristics make it an ideal substitute for wheat in slimming diets. It is in fact a low glycaemic index food with high satiating power that helps control hunger pangs. It contributes several benefits to the body:
