1 Place the Greek yoghurt, coconut milk, erythritol, coconut powder and xanthan gum in a bowl and whip with a whisk for about 2 minutes.
2 Leave to rest in the fridge for 30 minutes.
3 In a glass, arrange the yoghurt mousse, strawberry jam and granola in layers, decorate with fresh raspberries.
4 The mousse can be stored in the refrigerator for 2 days.
